About the Recipe
Biscoff Cookie Butter is a big deal in our house. At least it was anyway. Finding a good GF option readily available in the stores has proven much harder and more expensive than I thought it would be. This recipe from The Spruce Eats comes pretty close.
Feel free to play around with the types of cookies, spices and sweeteners. You can add a dash of vanilla extract or some extra crushed crunchy cookies in as well.
Ingredients

4 ounces Partake Cookie Butter Cookies
4 ounces Goodie Girl Brown Sugar Oat Cookies
1 cup boiling water
1/4 cup refined coconut oil, melted and measured and cooled slightly
2 tablespoons honey
1/4 teaspoon ground cinnamon
1 pinch kosher salt
Preparation
Step 1
Place cookies in a food processor and pulse until crushed then blend on high until fine crumbs.
Alternately place cookies in a bowl and crush until fine crumbs.
Step 2
Slowly add boiling water until you have a paste consistency. You may or may not need all of the water. Blend until smooth.
Step 3
Add remaining ingredients. Blend until smooth and creamy.
Step 4
Pour into a pint jar and chill for at least 1 hour. Keep in the fridge up to 1 week.
